Currently the only way is to remove the existing one manually and add a new mapping
Alternatively add a DELETE method on to the /api/Product/{id}/CustomFields endpoint so we can set a workflow to DELETE and then POST a new custom field mapping

Ability to update an existing Product Custom Field Mapping via file or through the API .
